Yoghurt with warm plums

Yoghurt with warm plums

  • 50 g almonds
  • 50 g hazelnuts
  • 50 g oatmeal
  • 50 g sunflower seeds
  • 3 tbsp honey or agave syrup
  • 2 tbsp coconut oil
  • 75 g mixed raisins
  • 3 plums
  • 800 ml traditional ( or vegan) yoghurt

Preparation method

  1. Preheat the oven to 175 °C.
  2. Roughly chop the almonds and hazelnuts. Scatter on a baking tray lined with baking paper with the oatmeal, sunflower seeds, honey and coconut oil. Roast the granola for approx. 30 minutes until golden brown and crispy. Turn them half way. Leave to cool slightly and stir in the raisins.
  3. Halve the plums, remove the stones and slice the flesh into wedges. Heat the rest of the coconut oil in frying pan. Fry the plums on a medium heat for approx. 5 minutes until soft and brown.
  4. Divide the yoghurt over four bowls. Arrange the warm plums on top and sprinkle with the granola.

 

Storage tip: The granola can be stored in a closed, clean jar for about two weeks.
