  • 50 g sugar
  • 200 g butter
  • 300 g flour
  • 1 egg

Creme patissiere

  • 1 vanilla pod
  • 400 ml milk
  • 50 g sugar
  • 3 egg yolks
  • 2 tbsp flour

Preparation method

  1. Preheat the oven to 180 °C.
  2. Make the creme patissiere first. Halve vanilla pod lengthwise and scrape out the seeds with the tip of a knife.
  3. Bring the milk, vanilla seeds and the sugar to the boil in a pan
  4. Whisk the egg yolks and the flour in a bowl until smooth. Pour the egg yolk mixture into the warm milk. Stir well.
  5. Gently bring the creme patissiere to the boil. Leave the mixture to simmer gently for 3 minutes. Remove from the heat and leave to cool covered.
  6. Make the pastry by combining the sugar and butter in a mixing bowl.
  7. Add the flour and egg to the mixture. Knead the pastry with a dough hook for approx. 8 minutes or knead by hand until you create a supple dough.
  8. Leave the pastry to rest in the fridge for about 30 minutes.
  9. Halve the plums and remove the stones. Thinly slice the plums.
  10. Grease the baking tin with butter.
