Halve 5 passion fruits and scoop out the flesh with a spoon. Zest the peel of the lime and squeeze out the juice. Stir the lime juice, lime zest and vanilla through the passion fruit flesh. Add the quark to the passion fruit mixture and stir until smooth.
Beat the cream. Fold 1/ 3 of the whipped cream through the passion fruit mixture. Gently fold the rest of the cream through to create a fluffy mousse.
Divide the mousse over 4 glasses. Place in the fridge and leave to firm for at least 2 hours. Halve the remaining passion fruit and cut into wedges or divide the flesh over the glasses. Garnish with edible flowers if wished.
