## Preparation method

1. Remove the casing from the chorizo and cut the sausage into rough chunks. Place the chorizo in a food processor and pulse until it forms coarse crumbs.

2. Heat a frying pan without oil and fry the chorizo over a medium heat for 4–5 minutes until crispy. Stir regularly. If necessary, spoon any excess fat out of the pan. Add the honey and fry for a further 30 seconds. Spread the chorizo crumbs out on a plate so that they become crispy as they cool.

3. For the beurre blanc, chop the shallot as finely as possible. Place the shallot, white wine and white wine vinegar in a saucepan. Bring to the boil and reduce over a medium heat until about 2 tablespoons of liquid remain. Strain the mixture through a fine sieve and return the liquid to the pan.

4. Trim the tough ends off the asparagus. Brush them with olive oil and sprinkle with salt. Finely chop the chives. Halve the cayenne pepper, remove the seeds and cut into small cubes.

5. Heat the grill pan without oil over a high heat. Grill the asparagus for 6–8 minutes, until al dente and bright green. Turn them regularly. If necessary, grill the asparagus in two batches if they do not fit in a single layer in your grill pan.

6. Cut the cold butter into small cubes. Heat the reduced wine mixture over a low heat. Add the butter cube by cube, whisking continuously until the butter has been incorporated before adding the next cube. Do not let the sauce boil. Season to taste with salt. You cannot reheat the sauce, but if you’re not serving it straight away, you can keep it in a thermos flask.

7. Divide the asparagus between four plates. Pour the beurre blanc over the top. Scatter the honey and chorizo crumbs over the sauce and sprinkle with the chives and cayenne pepper. Serve immediately.

Enjoy!
