A trifle is the ultimate showstopper for the Christmas table – something the British have known for a long time. We’re giving the trifle an exotic twist with our mango, passion fruit, dragon fruit and that gorgeous physalis, which, with its papery husk, is brilliant for decorating.

## Preparation method

1. Heat a dry frying pan and toast the desiccated coconut for about 3 minutes over a medium heat until golden brown. Spoon it onto a plate and leave to cool.

2. For the coconut cream, whip the double cream with a mixer until it reaches the consistency of yoghurt. Add the condensed milk and the vanilla extract and whisk briefly. Fold in the grated coconut. Place the coconut cream in the fridge until needed.

3. Cut the mango into sections on either side of the stone. Remove the skin and dice the flesh. Set aside a few cubes for garnishing.

4. Cut the dragon fruit in half lengthways. Scoop the flesh out of the skin with a spoon. Cut one half into thin slices and the other half into cubes and a few segments. Set the segments aside for garnishing.

5. Remove the papery husks from half of the physalis and cut the fruits in half. For the remaining physalis, carefully fold the husks back so that the fruits are visible. Cut 3 passion fruits in half, scoop out the pulp and place it in a small bowl. Cut the last passion fruit in half and set both halves aside for garnishing.

6. Cut the cake into slices about 1 cm thick. Place a layer of cake at the bottom of the trifle dish. Trim some slices to fit properly. Spread a third of the coconut cream over the cake and smooth it out. Arrange a few slices of dragon fruit and halved physalis against the rim of the glass, then scatter some mango, diced dragon fruit and passion fruit over the cream.

7. Repeat the layers with the rest of the cake, coconut cream and fruit. Make sure that different fruits are clearly visible against the edge of the dish with each layer. Finish with a layer of coconut cream. Chill the trifle in the fridge for at least 1 hour.

8. Just before serving, sprinkle the trifle with the toasted coconut flakes. Break the meringues into rough pieces. In the centre, build a generous tower of meringue, diced mango, dragon fruit segments, physalis in their paper casings and halved passion fruit.

Enjoy!
