The cranberries are the undisputed star of this cake roll. You make a tangy compote to fill the roll, which goes down a treat with the sweet, creamy buttercream. The cake is garnished with even more poached and sugared cranberries, and some sugared rosemary to create a real Christmas atmosphere.

## Preparation method

1. First, make the cranberry compote. Place the cranberries, granulated sugar and water in a saucepan. Bring to the boil and simmer over a low heat for 5–7 minutes. Stir regularly and crush about half of the cranberries with a spoon. The compote should be quite thick. Spoon into a bowl and leave to cool completely.

2. For the poached and sugared cranberries, put 100 grams of granulated sugar and the water into a clean saucepan. Bring to the boil and stir until the sugar has dissolved. Remove the pan from the heat and leave the syrup to cool for 5 minutes. Add the cranberries and leave them to soak in the syrup for 1 hour.

3. Using a slotted spoon, remove half the cranberries from the syrup and leave them to drain on a sheet of baking paper. Also, dip the sprigs of rosemary into the syrup and place them alongside the cranberries. Keep the remaining cranberries in the syrup.

4. Preheat the oven to 180 °C. Line a baking tray with baking paper.

5. Beat the eggs with 75 grams of sugar using an electric mixer for about 5 minutes until pale yellow, thick and fluffy. The mixture is ready when it runs off the beaters in a thick ribbon.

6. Sift the flour, cornflour, speculaas spices and salt over the egg mixture. Fold everything together as gently as possible. Spread the batter evenly over the baking tray. Bake the cake in the centre of the oven for 10–12 minutes until cooked. The cake is ready when it springs back when you press it gently.

7. Meanwhile, lay a clean tea towel on the worktop and sprinkle it with 1 tablespoon of sugar. Immediately turn the warm cake out onto the tea towel and carefully peel away the baking paper on which it was baked. Roll up the cake from one short end, with the tea towel in between. Leave the cake to cool completely.

8. For the buttercream, finely chop the white chocolate. Melt the chocolate in a bain-marie or in short bursts in the microwave. Leave to cool for about 10 minutes; the chocolate must remain liquid.

9. Beat the butter with the icing sugar and salt for about 4 minutes using a mixer until light and creamy. Add the cooled white chocolate and beat briefly until you have a smooth buttercream.

10. Carefully unroll the cooled sponge. Spread just under half of the buttercream over the sponge, leaving a 2 cm border all round. Spread the cranberry compote in a thin, even layer over the buttercream.

11. Roll the sponge up tightly again, without the tea towel. Place the roll, seam-side down, on a serving dish. Spread the rest of the buttercream over the top and sides. Chill the cake in the fridge for 30 minutes.

12. Sprinkle the remaining 40 grams of sugar into a deep plate. Roll the drained cranberries and sprigs of rosemary in the sugar so that they are coated all over. Drain the poached cranberries.

13. Garnish the cake roll with the poached cranberries, sugared cranberries and sprigs of rosemary. Grate the remaining white chocolate over the top. Store in the fridge, but allow the cake to come to room temperature for 30 minutes before serving so that the buttercream isn’t too firm.

Enjoy!
